MUTTON AND DRUMSTICK CURRY
Serves 6
Ingredients
½ kg mutton / lamb cut into medium size pieces
3 or 4 tender drumsticks
2 onions chopped finely
1 teaspoon ginger and garlic paste
2 teaspoons mild chillie powder
1 teaspoon coriander powder
1 teaspoon cumin powder
2 medium size tomatoes chopped
2 tablespoons oil
3 tablespoons coconut paste or coconut milk
Salt to taste
Scrape the drumsticks and then cut them into 2 inch pieces. Wash and soak them in a bowl of water.
Boil the meat with sufficient water and a little salt till tender. Remove and keep aside.
Heat oil in a pan and add the onions and fry till golden brown. Mix in the ginger garlic paste and fry for a few minutes. Add the tomatoes, chillie powder, salt, turmeric powder, coriander powder, cumin powder and coconut paste / milk and sauté for a few minutes. Now add the drumsticks and boiled meat and mix well. Add the left over meat stock / soup or 1 cup of water and cook on low heat till the drumsticks are cooked, taking care not to overcook the drumsticks.
Serve as a main curry with rice.
I do this the same way, but add a little tamarind water/ paste..
